Summery roasted vegetable pasta salad, using plain fusilli pasta (Serves 2)

Ingredients

1 x 250g pack of Veetee Dine In Plain Fusilli Pasta

¼ teaspoon freshly ground black pepper

¼ teaspoon dried oregano

2 tbsp lemon juice

2 tbsp olive oil

125g chargrilled, roasted vegetables (sliced courgette, aubergine, cherry tomatoes, peppers, red onions)

1 large handful of fresh spinach

1 handful of rocket

5 basil leaves, torn

1 handful of Parmesan cheese

2 tbsp Balsamic vinegar (good quality)

6 Piquante peppers roughly chopped (mild and sweet)

Salt and Pepper to taste

Method:

Heat the tray of pasta for 2 minutes in the microwave, according to pack instructions. Tip the hot pasta into a deep bowl, and leave to cool for 5 minutes.

Add all the other ingredients to the pasta, and mix everything together thoroughly.  Serve cold.

For a nice alternative you could toss in some diced feta or mozzarella cubes.
